"Marley and Me" and a box of tissues

Oh wow I went to see "Marley and Me" tonight and my goodness I don't think I have ever cried so hard or so much at a movie! I did not read the book for this reason because I knew it would end in Marley's death and I would cry. For some reason I guess because the trailers make it look hilarious (which it is up until a certain point) that the movie would not be that sad, I was wrong. So I am not saying don't go see "Marley and Me" because it is very good but definatly take a bunch of tissues. P.S. this makes you want to go home and love your dog that much more......

Moon

The moon looked so gorgeous tonight I had to get out my camera and take a picture. Hope everyone had a wonderful Friday.

Eggnog Cupcakes

So this is not my picture it came from this blog where I got the recipe. My frosting wasn't quite so perfect as it is in this picture and I didn't add the cinnamon stick but they tasted just as good I'm sure if not better :) So anyway this is one of the best cupcakes I have ever had! They were so moist and the cake and the icing complemented each other so well. The only thing I changed was the rum the recipe called for dark rum or bourbon and I used spiced rum instead which was perfect and I recommend it actually. These were actually really easy to make as well I was quite surprised, but I think everyone should try them they are so good!

Eggnog Cupcakes

ingredients:

For the cupcakes:
1/4 cup spiced rum
1 cup low-fat eggnog
1/4 cup vegetable oil
1 tbsp. apple cider vinegar
1 tsp. vanilla extract
1/4 tsp. ground nutmeg
1 cup sugar
1 1/3 cups all-purpose flour
1/4 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt

For the frosting:
1/4 cup butter softened
3 tbs. low fat eggnog
1 tbsp. spiced rum
generous pinch of nutmeg
2 (or more) cups powdered sugar
ground cinnamon to sprinkle on top

Directions:
Preheat oven to 350F. Line a 12-cup muffin tin with paper liners. In a small bowl, mix together the rum, eggnog, vegetable oil, apple cider vinegar, and vanilla extract. In a large bowl, mix together the nutmeg, sugar, flour, baking soda, baking powder and salt. Pour the liquid ingredients into the dry ingredients and whisk until just combined. Divide evenly between prepared muffin wells.

Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean and the cakes spring back when lightly pressed. Cool in the pan 5 minutes, then transfer to a wire rack to cool completely.

To make the frosting, cream together the butter, eggnog, rum, nutmeg and powdered sugar. Add in more powdered sugar if needed to make the frosting stiff, but spreadable. Frost the cooled cupcakes. Sprinkle with cinnamon and enjoy!

Makes 12 cupcakes

My grandma's birthday

Today December 11th is my Grandma's birthday. My mom had dinner for her here at our house tonight. I made eggnog cupcakes for dessert and they were yummy!  

Grandma you are such a wonderful woman and I love you more than you know! Happy birthday!

Keep Calm and Carry on Calendar





I was reading this blog written by a woman named Joanna Goddard a few days ago and she has been writing lists of cute Christmas gift ideas and she had this calendar (above) as one of her ideas and I absolutely love it! You can buy it for $5.00 here and then just print it off at home. I am definitely going to get it but I am not sure just yet who I will be giving it to. 

p.s. rereading some of my posts I think I may be the queen of run on sentences. I don't think I ever really know when to put a comma or to end a sentence instead of a comma etc. etc. I blame my crazy freshman english teacher Mrs. Tiffany......

The ROCKETTES

While I was watching the lighting of the Rockafeller Christmas tree on TV last week  I was talking to my dad on the phone about how much I love the Radio City Rockettes. I then remembered they were going to be coming to the sprint center soon, sooo long story short my dad got us tickets to the show on December 20th! I am so excited I love the Rockettes I even went to the website to see what it takes to become a Rockette but my short lived dream was crushed apparently you have to be between 5'6'' and 5'9''  and I am about 4 inches short of that boo! Oh well I am still very excited to see them live! And I will definatly let you all know how amazing it is!
